It can be assumed that while the assortment of nobles’ cellars was subject to quite dynamic change and successive expansion in the 19th century, the taste qualities of wines themselves did not undergo such a rapid revolution. The knowledge of wines, their medicinal properties, and the types of wines which were to be considered good, was still firmly rooted in the past, and the preferred tastes were consistent with the dietary tradition of the time, though opposed to new culinary trends.}, type={Text}, title={“Strongly spice-scented, young, good”.
