Date issued/created: Subject and Keywords: Abstract:Lactic acid bacteria are a group of microorganisms which have been used by people for centuries. Ever since, attention was drawn to their probiotic properties, interest in different applications of lactic acid bacteria has been growing steadily. The need to ensure both high quality and repeatability of production stimulates the demand for bacterial cultures which are ready to use and which are characterized by high viability and cell activity. At present, in order to produce such ready-to-use lactic bacteria cultures, the processes of freezing and freeze drying are usually employed. However, in their search for possibilities to reduce the production costs, the researchers have turned their attention to the process of spray drying. The conditions typical of the process of drying and resulting from the effect of high temperature and rapid dehydration of bacterial cells are not conducive to viability. However, the use of results of tests explaining mechanisms responsible for the survival of bacterial cells under stress conditions, combined with the application of carriers and auxiliary substances, increases the possibility of applying spray drying effectively in the production of fixed lactic acid bacteria cultures.
